Matt Piacentini’s Sherry Daiquiri

For this nutty variation on the standard Daiquiri, Matt Piacentini cuts the sweetener in half, supplementing it with a measure of sherry. Instead of 1:1 simple syrup, he uses a 2:1 Demerara syrup for concentrated richness. While the version below spotlights oloroso sherry, fino also can be used for a brighter note.


Serving: 1

  • 2 ounces white rum
  • 1/2 ounce demerara syrup (2:1, sugar:water)
  • 3/4 ounce lime juice
  • 1/2 ounce oloroso sherry

Garnish: lime wheel

  1. Combine all ingredients in a mixing tin and shake with ice.
  2. Strain into a chilled coupe glass.
  3. Garnish with a thin lime wheel.
