The wine-based gentian liqueur used in this recipe in lieu of Suze adds an extra-bitter element that complements the base spirit and blanc vermouth for a drink that has far more depth than its three ingredients would suggest: It’s minerally, herbal and bitter, but not all at once, creating layers of flavor that evolve with each sip.

Serving: 1
- 1 1/2 ounces mezcal
- 3/4 ounce blanc vermouth, preferably Alessio Vermouth Bianco
- 1/2 ounce Domaine La Bohème Gentiane Extra Bitter Aperitif
Garnish: expressed lemon twist (discarded)
Directions
- Combine in a mixing glass with ice and stir briefly for five seconds.
- Strain into a rocks glass over a large ice cube or whatever ice you have.
- Garnish with a lemon twist expressed over the drink, then discarded.
Editor's Note
For a slightly richer take, sub a half-ounce each of dry vermouth and Luli Moscato Chinato in place of the blanc vermouth. Additionally, if you can't find Domaine La Bohème Gentiane Extra Bitter Aperitif, sub another gentian liqueur of your choice, like Salers or Suze.
