“We’ve tried génépy in all kinds of cocktails where we’d normally use green Chartreuse,” says ABV’s Ryan Fitzgerald, of the herbal, pine-scented liqueur. In this cocktail—”a sort of tribute to [San Francisco bartender] Marcovaldo Dionysos, creator of the Chartreuse Swizzle and lover of tequila”—génépy meets blanco tequila, lime and pineapple, for a summer sipper that’s refreshing and ever-so-slightly bitter.
ABV’s Piña Verde

Ingredients
Serving: 1
- 2 ounces blanco tequila, preferably Tapatio Blanco 80pf
- 1 ounce lime juice
- 3/4 ounce génépy, preferably Dolin Génépy des Alpes
- 3/4 ounce pineapple gomme syrup
- 4 dashes orange bitters
Garnish: compressed pineapple
Directions
- Shake all ingredients and fine-strain into chilled coupe.
- Garnish with compressed pineapple.
