This seasonal take on the Daiquiri uses fresh rhubarb juice in place of lime to cut down the drink’s carbon footprint.
- 1 ounce white rum, preferably Bacardi Carta Blanca
- 1 ounce rhubarb juice (see Editor's Note)
- Combine all ingredients in a mixing tin and shake with ice.
- Strain into a chilled coupette.
Put the fresh rhubarb through a juicer. Adding a sprinkle of vitamin C powder will stop the liquid from browning.
