Sebastian Cañas of Yvonne’s in Boston plays on the Old Cuban cocktail in his aperitif, the Old Frenchie. “It’s a refreshing cocktail, with some citrus behind it that will get your palate clean and ready for dinner,” as an aperitif should, he says. White rum and mint, plus a dose of St-Germain and a topper of sparkling wine, makes for a drink that is “floral and elegant,” and ideal for an early evening cocktail.
