Old Salt Drink Recipe

In September 2021, amidst pandemic chaos, Last Saint came to life in Charleston, South Carolina by way of Joey Goetz, a widely known local bartender,  formerly of Belmont and Bar George, and  Brandon Bramhall and Zachary Pease, both with Attaboy backgrounds in New York City. The menu sits somewhere between classic cocktails and dive bar drinks, with familiarity and comfort being the common thread. Tequila, fresh lime, salt, fluffy whipped grapefruit juice and a giant grapefruit wedge as garnish make up the bar’s best-selling cocktail, the Old Salt. Conceptualized by Pease, it’s acidic, bright and salty, as if a Salty Dog and Paloma had a baby.  Juiced to order, the aerated grapefruit is the star of the drink, making it an ideal choice for brunch or late-night, because texturally speaking, it’s just right, no matter the time of day. —Jenn Rice

NB: To get that signature frothiness without a Breville juicer at the ready, hand-press the grapefruits and agitate the juice with a handheld frother or a blender.

Ingredients

Serving: 1

  • 1 1/2 ounces tequila or gin
  • 1 1/2 ounces tequila or gin
  • 1/2 ounce simple syrup
  • 1/2 ounce simple syrup
  • 1/2 ounce lime
  • 1/2 ounce lime
  • 2 dashes saline solution (see Editor’s Note)
  • 2 dashes saline solution (see Editor’s Note)
  • 4 ounces grapefruit juice (pressed in a Breville juicer with rind removed before juicing)
  • 4 ounces grapefruit juice (pressed in a Breville juicer with rind removed before juicing)

Garnish: oversized salted grapefruit wedge

Directions
  1. Combine all ingredients in a cocktail shaker, but do not shake.
  2. Pour directly over ice into a 10-ounce Collins glass.
  3. Garnish with an oversized salted grapefruit wedge on top.

Saline Solution
Combine 1 tablespoon of salt with 100 milliliters of water and stir or shake until dissolved.
