Houston bar Monkey’s Tail shakes dragon fruit powder with tequila for a quick infusion, then adds the powder to simple syrup for an even more amplified color and concentrated flavor.
Dragon Fruit Margarita

Ingredients
Serving: 1
- 2 ounces dragon fruit–infused blanco tequila (see Editor’s Note)
- 1 3/4 ounces dragon fruit syrup (see Editor’s Note)
- 1 ounce lime juice
- 1/2 ounce water
Directions
- Add all ingredients to a blender with enough ice to meet the top of the glass.
- Blend until smooth.
Editor's Note
Dragon Fruit–Infused Tequila
Combine 2 ounces of dragon fruit powder per 1 liter bottle of blanco tequila (preferably Hornitos Plata), and shake to incorporate.
Dragon Fruit Syrup
4 1/4 cups water
1/2 cup dragon fruit powder
3 cups white sugar
2 cups agave nectar
Bring water to a boil. Add dragon fruit powder and mix thoroughly. Add sugar, stir to dissolve, and turn off heat. Mix in agave nectar. Pour into a container, then refrigerate.
