This White Negroni variation from Trick Dog in San Francisco skips the Suze to preserve a crystal-clear appearance. Bar founder Josh Harris “feels strongly” that the liqueur’s sunny hue and distinct gentian bitterness don’t belong in the modern classic, and opts for Luxardo Bitter Bianco instead. While Harris favors an “old-school London dry” for this drink, he notes that a wide range of gins will work, though the end result “can be significantly different based on the gin you choose.”
