This spritz variation from bartender Michael Timmons gets a welcome dose of salinity in the form of olive brine. “I wanted to create a spritz variation that was bright and refreshing but had elements of a savory texture simultaneously,” he says.

Ingredients

  • 1/4 ounce olive brine
  • 1/4 ounce olive brine
  • 1/4 ounce apricot eau de vie
  • 1/4 ounce apricot eau de vie
  • 1/4 ounce apricot liqueur
  • 1/4 ounce apricot liqueur
  • 1/2 ounce Amaro Nonino
  • 1/2 ounce Amaro Nonino
  • 1/2 ounce Aperol
  • 1/2 ounce Aperol
  • 1 ounce sweet vermouth
  • 1 ounce sweet vermouth
  • tonic water, to top
  • tonic water, to top

Garnish: lemon twist, olive

Directions
  1. Build the drink in a highball glass filled with ice.
  2. Garnish with a lemon twist and olive.
