“Suze is a beautiful, bitter modifier,” explains Jim Kearns, who highlights the versatility of the liqueur in his Link Ray—which can be built on a base of a handful of spirits while allowing the earthy aroma of Suze to play off the vegetal notes of celery juice.


Serving: 1

  • 3/4 ounce lime juice
  • 1/2 ounce cane syrup
  • 1/2 ounce Suze
  • 2 ounce celery juice
  • 1 1/2 ounces tequila, agricole rhum, gin or vodka
  • soda water, to top

Garnish: celery stick, celery salt, medium-ground black pepper

  1. Shake all ingredients and strain into a highball over ice.
  2. Top with soda and garnish with a celery frond, celery salt and a pinch of medium-ground black pepper.
